I have a front alter ego bumper just getting rhino sprayed and a vr8000 warn winch going in it.  In two weeks I should hopefully also have my alter ego roof rack :)

With 31's and a manual, so 5.12's, I get about 19-20 mpg

with 30's I imagine you would get a couple more mpg

Depends on where you will be driving, noise level you accept, and on and on

I was thinking of going to 30's so I am interested in your thoughts if you do

Yes, please post mileage after changing the diffs.  I have a 4door, 5spd 16v and have gotten a consistent 22mpg on my last three tanks of gas.  I'm running 30"MT's and a three in altered ego lift.  I don't try to drive for gas mileage either.  I do a lot of around town and some hilly two lane roads and I'm not shy to hit 5k rpms when needed. 
I think once you sort things out should be able to hit 20mpg.

As for the fun factor, I have a 2004 Honda Cr-V manual transmission which is objectively the better road car but I can't stop driving the Zuk.  Its simply more fun.

I am going to talk to a guy today about buying a 1989 2 dr 5spd 16v for parts.  The body is full of rust but the engine apparently works very well and I could also get my diffs :)

You might to take a very close look at what you're getting there - as far as I know the 16v engine was not available in 89.

I could be wrong about the year but just diffs would cost me here about $350 and I can get the whole car for $500.
We will take the motor and tranny out.  Sell it and part out the rest and I will probably then get the diffs for free.  :)

That is correct. An 89 2 door sidekick with a 5 speed will have either a 1.3 8V carbed engine (5.62 axle gears), or a 1.6 8V EFI engine (5.12 axle gears).
