How about using a B&M Line Lock. It's hydraulic and you would have to cut a brake line and install. Then a 12 vdc solenoid keeps pressure in the line after you have pushed on brake. Very useful for hill holding, too. For emergency brake you have to source a switch that latches rather than the momentary one in the kit. I'd engineer the wiring to use the momentary function, too.
Don't want to mess with wiring, etc. You could use a Jamar hydraulic set-up. With this you just push down on the brake, press Jamar valve, hold it, and let off of brake. To release you just push brake. Doesn't work as a hill holder though as well as the Line Locker, also callled a launch control for drag racers.
