So i have heard a lot of different answers on this, but i have a 3" lift and was wondering what do most people with GV's run without to much modification, I don't mind cutting and trimming but also don't want to absolutely over run the torque converter.  I have heard that they will accommodate a 265 75 16 on stock wheels.  Any insight would be appreciated.

235/70R16 is the absolute largest tire you can run on OEM rims, these will just rub the frame on full lock, and will require minimal trimming of the lower edge of the front bumper.

If you want to run 265/75R16, you'll need to find wheels with a different offset, you'll also need to trim, and by quite a bit - the gearing will also need to be adjusted appropriately.

I run 225x75x16 on my 2000 GV with 2 1/2" lift and stock aluminum wheels. Slight trimming was necessary but not much.
