Brand new rebuilt 1.3 Samurai Motor got water in oil

Ok guys here is the 50 million dollar question.
I just got my 1.3 motor rebuilt at K&K machine.  I went there because Zuks Off Road told me that's where they send their motors.  I wanted to go to someone that builds a lot of zuk motors so they know what they are doing.
Well, start up happened yesterday.  K&K told me to either use break in oil or regular oil with a zinc additive so I used regular motor oil with Lucas engine break in oil additive. The builder also told me to run the motor at a strong rpm (about 1500 rpm) for 10 minutes at start up so that's what I did.  It ran awesome and I could tell it sounded very strong.
After start up, I shut it down and checked my fluids to be sure they where good.  The first thing I noticed was my oil was a milky white and a half quart higher then when I started.  I thought, OMG this is what happened when my head gasket went out the first time.  I really doubted that the Lucas additive would turn the oil white.  Anyone know about that?
Anyway,  I then checked my coolant level and the motor had pulled all of the coolant out of my reserve tank and the radiator was low (I knew that was normal because all the motor passages would fill once the thermostat opened.  I topped off the radiator and reserved tank so they were now full and should stay full.
I then started it a second time and noticed I had a lot of steam coming out of my exhaust pipe and my coolant reserve tank was slowly going down again so I shut it down with my greatest fear that the head gasket went out again but I also wondered if my intake was bad letting water into the intake ports of the motor causing the steam but this would not explain the milky white oil right?
I did a compression test on the motor today and all four cylinders tested 160 plus pounds of pressure.  The pressures even held without going down so this tells me my head gasket is fine.
Any ideas guys? I am really stumped on this one.

So they rebuilt it and fully assembled it? If so take it back to them and have them figure out what is wrong and tell them to fix it.

What was the problem with the engine to start with that you had it rebuilt ?

Hey guys,
Sorry for the late reply. I took the motor back to the builder and the head cracked.  They replaced the head for me and i will pick it up on saturday. Whowaa!! K&K Machine in Prescott Az stands behind their work. Thank God!
