Backspacing.
"Normal" backspacing, us usually sojmething like half the rim width, minus a quarter inch (give or take). That's because normally, the mounting surface of the wheel is just about "smack in the middle" of the rim.
So a 7 inch rim would normally have about 3.25 inches of backspacing - the distance from the inside edge of the rim, to the mounting surface. An 8" wheel would run 3.75"
SO - the factory 5.5" rim has about 2.5 inches of backspacing.
When you put your big meats on, you don't want them sticking too far "in" to the wheel well, so you go with the same backspacing - 2.5 to 2.75 inches even though your rim has gone from 5.5" to 8" - that puts all the additional width outside the mounting surface.
