I'm looking for the parts necessary to convert a 1.6 fi to carb.  How hard would it be to find a 1.6 carb'd head with manifold etc?

Very.

Ony the earliest of the Sidekicks were Carbed and most of them (if not all) were running 1.3 engines.

If you have a 1.6 8-valve, you can use an intake from a carbed 1.3 engine and adapt several types of carburetors to it.  The most popular being the Harley Davidson 40mm and 44mm sidedrafts via a MySide kit (zuksoffroad) or the Weber 32/36 DGAx carb.

If you are talking about a 1.6 16-valve engine, the 1.3 maniforld will not easily (if at all) adapt.

One of the great things about FI is the fact that it provides more mileage, better performance (especially offroad!) and has fewer mechanical problems.  Yes, electricity is involved, but that's part of modern technology.

If you can, see if you can find a way to work out your EFI gremlins.  You'll enjoy your truck more in the long run.  I know I would if I had it to do again...

If it's 8v then you can just run a 1.3 head, that gives you the manual fuel pump and the intake you need and you can just run the Hitachi carb that was stock on 1.3s, and you can run the current exhaust mani. This way you don't tie all the money up in doing it then hate it and want to go back to FI but already spent all your cash and can't afford to.

I live in a pretty remote part of Mexico and it's tough dealing with anything computerized.  For one thing even the dealers can only scan a car built for Mexico.  We also have a very humid climate which is rough on electronics.  Lastly I get out into pretty remote and jungly areas.  I need to be able to work on what I drive.  If I'm broken down in  the middle of nowhere I have to be able to work on it.  If I have to leave it overnight there's a good chance it won't be there intact when I return.  I converted a Land Rover from fi to carb and it's been just fine ever since.  So,  what about the conversion.  I do have the 1.6 16 valve.  What kind of work are we talking to get the 1.3 manifold to work?   Again, Thank You for your attention and advice.

 A lot of work.

Aside from adapting the 1.3 intake to the intake ports on a 16-valve head, you have to do something about the injector ports, which will not be needed.  You'll need to swap the Distributor out for A 1.3 L unit...   You might as well find a 1.3 8-valve or a 1.6-8-valve head and swap it onto your 1.6 block.   

The 1.6 block will take either the 1.6 8-valve or the 1.3 head!  Also, you'll need a 1.3 intake manifold as it is better-suited for adapting to a carb than the Throttlebody Injection intakes found on 1.6 8-valves and late model (post '88.5) 1.3 engines.

You'll also need a low-pressure fuel pump and a regulator.  If you find a 1.3 head with a manual fuel pump (located on the intake side of the head "around the corner" from the distributor)  go ahead and take the pump off, remove the pump drive rod and install a block-off plate.  The mechanical pump can be very unreliable and will "wash" your engine with gasoline if broken.

When you switch to another carburetor, you can pretty much remove all circuitry related to the carburetor including the ECU.
